Thai green curry recipe

Curry is not a dish that is only popular in India. Other countries also have their own version of curry dishes particularly in Thailand. And just like the curry cuisines in India, Thai curries also use different spices as well as main ingredients. More often than not, meats are the main ingredients used in making curries. There are actually two kinds of curries that are popular in Thailand – the red and the green curry. Below is the recipe for creating Thai green curry. This is an easy-to-do cuisine and would only take at least 1 hour to finish.

Recipe for Thai green curry

What you need are:

  • ˝ chicken, cut into pieces
  • 1 red bell pepper (de-seeded and sliced)
  • 1 green bell pepper (de-seeded and sliced)
  • 3 kaffir lime leaves
  • 2 stalks of lemon grass, cut (make sure that you remove the dry leaves and you take the bulb off when preparing the dish)
  • 1 cup of fresh basil

Green curry sauce ingredients:

  • 1 can of coconut milk
  • 1 small onion, chopped
  • 3 cloves of garlic
  • ˝ tablespoon of ground coriander
  • 3 tablespoons of fish sauce
  • 1 tablespoon of soy sauce
  • 1 cup of fresh coriander, chopped
  • 1 teaspoon of sugar
  • 1 tablespoon of freshly squeezed lime juice
  • Ginger, sliced

Optional ingredients:

  • Shredded cocounut, for garnishing
  • Green or red chili, sliced (depending on your desired spiciness)

Preparing the Thai green curry:

  1. Open the oven and preheat it up to 375 degrees.
  2. Put the chicken in a large casserole and cover.
  3. In a food processor, put all the ingredients needed to create the green curry sauce. Blend it until you have created a sauce. If in case you do not have a blender or a food processor, you can mince all the ingredients needed in making the green curry sauce. Mince it very well and mix everything in a bowl.
  4. Put the green curry sauce in the chicken. Add the lemongrass as well as the lime leaves and stir well.
  5. Cover the casserole and put it in the oven.
  6. Leave it for at least 45 minutes and bake it under 375 degrees.
  7. After baking it for 45 minutes, remove the casserole from the oven.
  8. Put the red and green bell peppers and stir well.
  9. Bake it again for at least 15 minutes.
  10. Get the casserole from the oven. Stir the curry sauce and then taste it. If you haven’t reached the desired saltiness of the dish, you may add at least ˝ tablespoon of fish sauce at a time. Do this until you have reached your desired taste. On the other hand, if the curry sauce is too salty, just simply add more lime juice.
  11. For a mild curry sauce, add coconut milk. Chili sauce or chili powders may also be added if you want to have an extra flame in your Thai green curry.
  12. Take the lemongrass sticks before serving.
  13. You can serve the casserole dish to your guests or transfer it on a platter or serving bowl.
  14. Garnish it with fresh basil, shredded coconut or coriander.
